My girlfriend and I just booked a rail and ferry travel package to Amsterdam. Admittedly, in this instance it's impracticalities are offset by the novelty of the relatively short journey. Also, it rather adds to the holiday. Part of our reasoning was the possible disruption by ash, so in all good conscience I voted "yes".
However, on a business trip further than is possible to reach on the Eurostar, I would not hesitate to book air travel.
That may change with increased high speed coverage throughout Europe. Eurostar is already the quickest option for Paris.
